GULAB JAMUN WITH VANILLA ICE CREAM

Question, why on earth would anyone want to buy Gulab Jamun instead of making them? For my mom, it's a recipe she knows by heart, a thing to be made on whim, the reliable fall back dessert she has mastered for years. It is dotted in every menu that is something or anything festive. Especially Eid festivals.

So what is it? Deep fried cake, Sweet dumplings, Waffle balls. You can call them what you please. Deep fried walnut sized sweet for some king, in calories and flavor. End result? A sweet carmalized dumplings were ready to be relished.


GULAB JAMUN

Prep time: 20 minutes

Cooking time: (depends on the amount) 20 minutes

Serves 7-15


INGREDIENTS

2 cups milk powder

1 cup all purpose flour

3/4 tea spoon baking powder

1 table spoon ghee

a pinch of cardamom powder

1/4 cup thick cream/ warm milk

2 table spoons chopped Almonds, Pistachio



Oil/Ghee: for frying



FOR SYRUP

Water: 1cup

Sugar: 2 cups

Cardamom: 1/2 tea spoon

Saffron: a pinch


DIRECTIONS

Take the ingredients and mix in a bowl.

Add some warm milk instead of water to make the dough.

Gently knead the dough and set it aside for 10 minutes.

Add finely some chopped almonds, pistachio in the dough and roll it into small balls.

Make sure there are no cracks in the balls, so fix if any by dabbing little oil on your fingers.

It is prefer to make small balls, for even cooking of jamuns from inside out and kids love the size. And use a small sauce pan it’s easier to handle the balls. Add 3-4 at a time depending on the size of the pan.


You can use half oil and half ghee for deep frying for a richer taste.

Heat ghee/oil in a deep skillet. Fry the jamuns on low heat till it turns dark brown.





FOR THE SYRUP

Prepare the syrup in a pan, by boiling - water, sugar, saffron and cardamom for enhanced flavor.

Take out the jamuns on the paper towel and soak them in sugar syrup.



Leave for a few hours, preferable overnight.

The gulab jamuns can be either served at room temperature or a little warm.

Can be warmed in a microwave for 10 seconds just before serving.

Can't beat the feeling, warm thin caramelized crust outside & sweet and soft from inside.

Just before serving, a scoop of vanilla ice cream.

What say ? - "Deadly Combo" and I simply love to have hot jamuns with chilled ice cream...!
