I was thinking coffee, chocolate a bit of swirled buttercream on top and you end with the most glorious dark chocolate cupcake! Look at it, my eyes are drooling. Hungry? Let's make some. Makes a serving of 10.
INGREDIENTS:
3 cups all purpose flour
1/2 cup unsweetened cocoa powder, sifted
1 teaspoon baking soda
1 cup brewed coffee
3 eggs
1/2 cup granular sugar
1/2 unsalted butter, at room temperature
1 cup brown sugar
FOR BUTTERCREAM FROSTING:
3/4 cup unsalted butter
3 cups sugar, sifted
4 tablespoons unsweetened cocoa powder, sifted
6 tablespoons cocoa powder
2 teaspoons vanilla bean paste or pure vanilla extract
3 tablespoons brewed coffee
FOR THE GARISH:
• Chocolate shavings.
• Dark chocolate cappuccino sticks.
COOK TIME...
Now lets get down to it.
• Preheat oven to 350°F. Line two 10 cup muffin pans with paper liners or you can just medium cups.
• In a medium bowl whisk flour, cocoa powder and baking soda together. In another small bowl, pour in the coffee. Set both aside.
• Using a mixer, mix the cream butter and sugar until light and fluffy. Add eggs, one at a time. Alternately add flour mixture and coffee to butter mixture, beginning and ending with flour mixture.
• Using n ice-cream scoop with a retractable mechanism, fill liners about 3/4 full. Bake for 18-20 minutes, or until a toothpick inserted in the center comes outclean. Allow cupcakes to cool for sever minutes before transferring to a wire rack to cool completely.
In the mean time as the cupcakes cool, let's start on the butter cream frosting.
BUTTER CREAM FROSTING:
• Beat butter until pale in colour.
• Slowly add powdered sugar, coffee and frosting starts to come together. Add the cocoa powder and increase speed. Beat for several minutes until frosting is smooth and fluffy.
• Pipe or spread onto the cupcakes and garnish with chocolate shavings or the cappuccino sticks if desired.
Serve and melt away. 😍😋
